**Before I resume to regular posting I wanted to take a minute out and remember all of the innocent children and teachers that were tragically taken from this world in Newtown, CT. I will never ever ever understand how someone becomes so evil, what these family members are going through and how scarred these children will be for a long time. It really worries me knowing that children aren’t even safe at school when Adam and I want to become parents. I have such a heavy heart over Friday’s tragedy and if I can’t stop crying, I know they are hurting 100x more. I will keep their community in my constant prayers and truly wish I could take some of their pain away.**
There aren’t many better ways to enjoy Sunday dinner than taking the lid off of a crock-pot. Watching football while your dinner cooks itself is a dream come true. (Especially when your team has won FIVE in a row and is in 1st place of the NFC East!!)
Most of you know that I don’t eat meat (13 months free!), but getting Adam to enjoy a meatless meal is hard work! I have to convince him there is A LOT of protein in sweet potatoes. Hey, it’s not a complete lie Last week I made a soup that bombed hard. Even I wouldn’t pretend to eat it and I eat anything! This week however did a lot better. In fact, we’re eating it again tonight.
No dirtying up the dishes again! #winning
Spicy Sweet Potato & Black Bean Chili
1 sweet potato, cubed
1/2 of a large sweet onion, diced
1 green pepper, chopped,
1 28-ounce Diced tomatoes
1 14-ounce can black beans
1 14-ounce can kidney beans
1 4-ounce can of green chilies
1/2 cup vegetable broth to get everything moving
1/2 package of Trader Joes Taco Seasoning mix ( sea salt, cumin, cayenne pepper, cane sugar, paprika, onion, garlic, black pepper, red bell pepper, oregano, chili pepper, and smoked paprika)
Add everything to crock pot.
Cook on High for 4 hours (or low for 8).
Set it and Forget it.
Enjoy with greek yogurt as sour cream, mexican cheese mix and chips (We used vegetable flax seed).
I think we could all use a good comfort meal right now.
