If we’re being completely honest, the food at the resort in Mexico wasn’t spectacular… I felt like we were always picking through things we thought were acceptable to eat. A lot of people got sick and we weren’t exactly sure what was causing it so we were extra careful! Nobody wants to be sick on vacation…
Breakfast: Breakfast was probably my favorite meal — It’s really hard to mess that up!
My meals looked similar to this every morning — Egg whites with veggies, fruit, cottage cheese, and a pancake with jelly and granola on top.
Lunch: Lunch was my least favorite… Most of the times I just wanted a huge salad so it was hard to find something I was interested in.
The salmon burger…wasn’t salmon. The pizza was OK. The wedding cake was DELICIOUS! My favorite was probably the crab stuffed avocado — I absolutely love avocados. If you’re wondering, yes — I ate ice cream after every meal just like in St. Lucia.
Dinner: We failed at making reservations at the nicer restaurants so choosing from the buffet some nights was just meh. But when we did make it to one of the restaurants we were highly impressed.
The restaurant had wonderful service, great views and the tiramisu tasted like a boston creme doughnut – YUM.
I’ve been home for 24 hours now and my meals have consisted of fruit smoothies, lots of protein and even more vegetables!
I have another fun-filled weekend ahead of me so it’s time to get my butt to the gym!
